02 — Challenge

Retail bagging depended on manual weighing, bagging and hand-pack stations sitting downstream of existing vacuum packaging and metal detection.

Overpack was structural: portioning had no live signal from batching, so the distribution curve was protected with product instead of data.

Excessive overpack and hand bagging are no longer acceptable in the modern era. The future of seafood packaging is closed-loop portion-to-batch integration, where the product is already on the right distribution curve before it reaches the bag.
